Hueso Guadalajara, MX

Located on Calle José Efrain Gonzalez Luna is a restaurant made of bones. Hueso is a trendy restaurant in Guadalajara, Mexico known for its family style long tables, weekly menu, and bone walls.


Hueso is located in Guadalajara, Mexico. It's named after the Spanish word for bone, hence the bones used for decoration. I first visited Hueso while on a family vacation in Mexico. It's a very well-known and popular restaurant because of how different the set up is. It's mostly attracted by upper class people who live in the area.



The concept of Hueso is really interesting. There are two very long tables in the middle of the restaurant and in order to get a seat you have to reserve your seats days prior. You're usually seated in front of the people you go with. So for example if there's 4 people in your party it'll be the person you know on your left a stranger on your right and the 2 others from your party sitting in front of you.


When I went we were seated next to a very friendly family who spoke to use the entire dinner. Written in a vice article about Hueso, the chef Alfonso Cadena says that he put the long table and sit people side by side to encourage different groups to talk and share with one another.





Chef Alfonso Cadena changes the menu very often. He says that the story behind that is that he just cooks whatever he feels like cooking. The menu is also dependent on what fruits and vegetables are in season and what seafood is freshly available. The menu features incredible dishes such as mussels in beef broth, braised short ribs, bone marrow with scallops and much more. The style of food definitely does not fit everyone's liking, but it is one of the best meals I have ever had in my life.


As I mentioned above, the menu varies for many reasons. When I visited it was December and the menu consisted of mussels in a white wine sauce, raw salmon, and a huge piece of meat on the bone. The food was incredible and the drinks (virgin of course) were just as good.


The atmosphere of the restaurant makes the experience so much better. Everyone is talking to each other and the restaurant is usually packed. If you just sit there and listen to people sitting near you's conversation you get a little glimpse of their life. I remember the person sitting to the left of me was talking about how she walked in on her boss cheating on his wife with another one of the business partners, who happened to be a man.


Hueso is definitely one of my top favorite restaurants. If someone was to ask me where to eat in Guadalajara I would say Hueso and La Docena but that will be my next blog..
